5. Beets

Plant beets by July for a fall harvest. There are white, yellow, and red varieties of beets. Even the greens can be picked when young and used in salads. The green tops are actually more nutritious than the root part.

Plant rutabagas by July in order to harvest them by the fall. Rutabagas are also known as Swedish turnips. They are a cross between a turnip and a cabbage, but are often mashed and eaten like potatoes.

This is yet another crop that should be planted no later than July in order to have a fall harvest. Cabbages can be eaten raw or cooked and they are also an excellent source of vitamin C. These are easy to grow and all you have to do is watch out for the cabbage worms.

The middle of August is the best time for planting leeks if you want to harvest them once the weather cools down. Leeks are great in soups. These plants belong to the same family as onions and garlic, but they don’t have as strong of a flavor as onions and garlic plants do.

In order to harvest Swiss chard by the fall, plant it by mid-August. Red Swiss chard has stems that are brightly colored and they can really add to the drab appearance of a fall garden. These leafy vegetables take around a month to grow. Most people cook up the leaves and eat them with salt and vinegar.
