5. Zolushka

It takes 110 days for this variety of potato to reach a final size of 3 to 4 inches. The flesh is bright white and the outside of this potato is also very light. Zolushka potatoes are easy to grow from seed. They are also resistant to late blight and viruses. These potatoes are excellent fried or boiled.

4. Caribe

If it’s a blue-skinned potato you’re looking for then look no further. The Caribe potato takes between 70 to 90 days to mature once the tuber is planted. The flesh is white inside and this potato can be used in any way imaginable.

3. Yukon Gold

For another 70 to 90 day potato variety, the Yukon Gold is en excellent choice. It was introduced in 1980 and has been going strong ever since. This is a fantastic potato to use for making some nice sized baked potatoes. The golden hue of this potato isn’t lost when it’s cooked either.

2. Viking Purple

This thin-skinned purple potato takes anywhere from 90 to 100 days to mature. Viking Purple potatoes store very well, despite the thin skin. They are also tolerant to drought and extreme heat which many southern gardens experience many times during the summer months.

1. Red Pontiac

The Red Pontiac potato does well in heavy soil and produces many potatoes on a single plant. It takes between 90 to 100 days for this potato to reach maturity. This is an excellent variety for boiling, since they hold their shape very well. They can also be used for baking and mashing too.
